Joanne has been training chefs and teachers in the natural food industry since 1983, when she founded the School of Natural Cookery® in Boulder, Colorado. This unique school demystifies cooking and eating by teaching the Language of Cooking™, and offers diverse programming for the aspiring professional as well as the Main Course®, a transformative curriculum for the home cook. Students explore the sensual nature of healing foods as they learn how to balance flavors, textures and tastes – in other words, the art of cooking – using whole, natural ingredients.

As the author of Amazing Grains (1990), Romancing the Bean (1993) and Intuitive Cooking (2006), Joanne’s recipes and expertise have also appeared in Delicious Living Magazine and on local and national radio shows. Her work includes keynote speaking appearances and consulting with restaurants and natural food companies to help them design and create enticing menus and tantalizing natural food products.

Rebecca Blakeney
The Conscious Cook

Rebecca is a certified teacher of The Main Course® (from the School of Natural Cookery®), and loves teaching home cooks how to prepare whole foods intuitively, without recipes. Her first-hand experience with the power of living a holistic lifestyle led her to become a Registered Holistic Nutritionist. She chooses foods that are full of vitality, organic and unrefined whenever possible, and does her best to live her life naturally and healthily. Rebecca’s precious cats also eat natural food, and she is delighted that her not-so-natural boyfriend enjoys her braised tempeh and tamari almonds.

Rebecca is also an established writer and editor in the natural health industry. She earned her LL.B. from Dalhousie Law School and her B.A. from Dalhousie University, and enjoys taking workshops and classes in holistic healing, languages, drawing, and whatever else she is moved to study.
